- 1Preheat oven to 425°F (220°C). Bring a large pot of salted water to a boil.
- 2Boil the whole cauliflower head for 8 minutes. Remove and let drain upside down on a towel.
- 3Place the cauliflower on a baking sheet. Rub all over with olive oil, then press the za'atar all over the surface. Season with salt.
- 4Roast for 35-45 minutes, until deeply golden brown and tender when pierced with a knife.
- 5While cauliflower roasts, make tahini sauce: whisk tahini, lemon juice, garlic, and salt. Slowly whisk in water until it reaches a drizzling consistency. Serve the whole cauliflower drizzled with sauce and garnished with pomegranate seeds.
