- 1Preheat oven to 425°F (220°C). In a large bowl, toss potato wedges with half the olive oil, half the za'atar, salt, and pepper.
- 2Arrange potatoes on a large rimmed baking sheet. Roast for 15 minutes.
- 3While potatoes roast, toss chicken thighs with remaining olive oil, za'atar, lemon juice, salt, and pepper.
- 4Remove sheet pan from oven. Push potatoes to the sides and place chicken thighs and lemon halves in the center.
- 5Return to oven and roast for 25-30 more minutes, until chicken is cooked through and potatoes are tender and crispy.
