This is a next-level hot chocolate. We infuse warm milk with classic chai spices like cinnamon, cardamom, ginger, and cloves, then stir in dark chocolate for a deeply rich and comforting beverage. It's the perfect drink to curl up with on a cold November evening.

    In a small saucepan, combine the milk, ginger, cardamom, cinnamon stick, and cloves. Heat over medium heat until it just begins to simmer. Remove from heat, cover, and let steep for 5-7 minutes.

    Strain the milk through a fine mesh strainer to remove all the whole spices.

    Return the infused milk to the saucepan over low heat. Add the chopped dark chocolate and whisk continuously until the chocolate is completely melted and the drink is smooth.

    Taste and add maple syrup or sugar if desired.

    Pour into mugs and top with whipped cream and a sprinkle of cinnamon.
