- 1In a small saucepan, combine the milk, ginger, cardamom, cinnamon stick, and cloves. Heat over medium heat until it just begins to simmer. Remove from heat, cover, and let steep for 5-7 minutes.
- 2Strain the milk through a fine mesh strainer to remove all the whole spices.
- 3Return the infused milk to the saucepan over low heat. Add the chopped dark chocolate and whisk continuously until the chocolate is completely melted and the drink is smooth.
- 4Taste and add maple syrup or sugar if desired.
- 5Pour into mugs and top with whipped cream and a sprinkle of cinnamon.
- 6Serve immediately.
