- 1Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper.
- 2Sauté onion and mushrooms until soft and liquid has evaporated. Add garlic and cook 1 minute.
- 3In a food processor, pulse half the lentils, all the oats, and walnuts until crumbly. Transfer to a bowl.
- 4Add remaining whole lentils, sautéed veggies, flax egg, tomato paste, thyme, salt, and pepper. Mix until it holds together.
- 5Press mixture firmly into loaf pan. Mix glaze ingredients and spread over top. Bake 45-50 minutes. Cool 15 mins before slicing.
