- 1Preheat oven to 190°C (375°F). Place the pepper halves cut-side up in a baking dish.
- 2Heat olive oil in a skillet over medium heat. Cook the ground turkey and onion until the turkey is no longer pink and the onion is soft. Add garlic and spices, cooking for 1 more minute.
- 3Remove from heat and stir in the cooked quinoa, corn, black beans, and tomato sauce. Season with salt and pepper.
- 4Spoon the filling mixture evenly into the pepper halves.
- 5Cover the dish with foil and bake for 25 minutes. Remove foil, sprinkle with cheese, and bake for another 10 minutes, or until peppers are tender and cheese is bubbly.
- 6Let cool for a few minutes before serving.
