    Preheat oven to 190°C (375°F). Place the pepper halves cut-side up in a baking dish.

    Heat olive oil in a skillet over medium heat. Cook the ground turkey and onion until the turkey is no longer pink and the onion is soft. Add garlic and spices, cooking for 1 more minute.

    Remove from heat and stir in the cooked quinoa, corn, black beans, and tomato sauce. Season with salt and pepper.

    Spoon the filling mixture evenly into the pepper halves.

    Cover the dish with foil and bake for 25 minutes. Remove foil, sprinkle with cheese, and bake for another 10 minutes, or until peppers are tender and cheese is bubbly.
