- 1Brew espresso and let it cool completely in a shallow dish.
- 2In a bowl, whisk egg yolks and sugar until pale and thick. Gently fold in the mascarpone until just combined.
- 3In a separate bowl, whip heavy cream and vanilla to stiff peaks. Gently fold the whipped cream into the mascarpone mixture.
- 4Quickly dip each ladyfinger into the cooled espresso (do not soak) and place at the bottom of each serving glass.
- 5Add a layer of mascarpone cream over the ladyfingers. Repeat with another layer of dipped ladyfingers and cream.
- 6Cover and refrigerate for at least 4 hours, preferably overnight. Just before serving, dust the top generously with cocoa powder.
