Sumac Onion Fattoush Salad

- 1Toss pita pieces with a little olive oil and salt. Bake at 400°F (200°C) for 8-10 minutes until crisp. Let cool.
- 2Toss the sliced red onion with 1 tsp sumac and a pinch of salt. Let sit for 15 minutes to marinate.
- 3In a large bowl, combine lettuce, cucumbers, tomatoes, radishes, marinated onions, mint, and parsley.
- 4In a small bowl, whisk together lemon juice, 3 tbsp olive oil, 1 tbsp sumac, salt, and pepper to make the dressing.
- 5Just before serving, add the pita chips to the salad and toss with the dressing.
