The Ultimate Sticky Toffee Pudding

(0 Ratings)

The Sticky Toffee Pudding is a beloved classic British dessert, known for its deep, comforting flavor and luxurious texture. This recipe features an incredibly moist sponge cake, made dark and rich by finely chopped dates. The real star, however, is the luscious toffee sauce, a simple but decadent mix of butter, brown sugar, and cream that is poured liberally over the warm cake just before serving. Best enjoyed with a scoop of vanilla ice cream or a generous dollop of crème fraîche, it's the perfect sweet ending for any special meal and a test of baking skill.

Instructions

  1. 1
Preheat oven to 180°C (350°F). Grease and line an 8x8 inch baking pan. Place chopped dates in a bowl, pour boiling water and baking soda over them, and set aside.
  2. 2
Cream together the 60g butter and 150g brown sugar until light and fluffy. Beat in the eggs one at a time. Fold in the flour, then gently mix in the date mixture.
  3. 3
Pour batter into the prepared pan and bake for 35-40 minutes, or until a skewer comes out clean.
  4. 4
While the pudding bakes, make the sauce: combine 100g butter, 100g brown sugar, and heavy cream in a saucepan. Bring to a boil, stirring constantly, then reduce heat and simmer for 5 minutes until thick and glossy.
  5. 5
Once the pudding is out of the oven, poke holes all over the surface and pour half of the sauce over the warm pudding. Serve the remaining sauce on the side.
