- 1Preheat oven to 180°C (350°F). Grease and line an 8x8 inch baking pan. Place chopped dates in a bowl, pour boiling water and baking soda over them, and set aside.
- 2Cream together the 60g butter and 150g brown sugar until light and fluffy. Beat in the eggs one at a time. Fold in the flour, then gently mix in the date mixture.
- 3Pour batter into the prepared pan and bake for 35-40 minutes, or until a skewer comes out clean.
- 4While the pudding bakes, make the sauce: combine 100g butter, 100g brown sugar, and heavy cream in a saucepan. Bring to a boil, stirring constantly, then reduce heat and simmer for 5 minutes until thick and glossy.
- 5Once the pudding is out of the oven, poke holes all over the surface and pour half of the sauce over the warm pudding. Serve the remaining sauce on the side.
