- 1In a large bowl, gently combine ground lamb, breadcrumbs, beaten egg, chopped parsley, mint, dill, grated red onion, minced garlic, cumin, salt, and pepper. Mix until just combined, being careful not to overmix. Form into 1-inch meatballs (about 20-24 meatballs).
- 2Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned on all sides and cooked through (internal temperature reaches 160°F/71°C), about 10-12 minutes. Remove meatballs from the skillet and set aside.
- 3While meatballs are cooking, prepare the pearl couscous. In a medium saucepan, bring vegetable broth (or water) to a boil. Add pearl couscous, reduce heat to low, cover, and simmer for 10-12 minutes, or until liquid is absorbed and couscous is tender. Fluff with a fork, then stir in the lemon zest and half of the lemon juice.
