Instructions

  1. 1
In a large bowl, gently combine ground lamb, breadcrumbs, beaten egg, chopped parsley, mint, dill, grated red onion, minced garlic, cumin, salt, and pepper. Mix until just combined, being careful not to overmix. Form into 1-inch meatballs (about 20-24 meatballs).
  2. 2
Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned on all sides and cooked through (internal temperature reaches 160°F/71°C), about 10-12 minutes. Remove meatballs from the skillet and set aside.
  3. 3
While meatballs are cooking, prepare the pearl couscous. In a medium saucepan, bring vegetable broth (or water) to a boil. Add pearl couscous, reduce heat to low, cover, and simmer for 10-12 minutes, or until liquid is absorbed and couscous is tender. Fluff with a fork, then stir in the lemon zest and half of the lemon juice.
  4. 4
Prepare the herbed yogurt sauce: In a small bowl, combine Greek yogurt, remaining lemon juice, chopped fresh mint and dill (for sauce), and salt. Stir well until smooth.
  5. 5
To serve, divide the lemon pearl couscous among plates. Arrange the lamb meatballs on top of the couscous. Drizzle generously with the herbed yogurt sauce. Garnish with fresh cucumber slices and extra herbs if desired.
