- 1In the pot, heat oil and brown the lamb cubes. Remove and set aside. Sauté sliced onions until soft.
- 2Add the ginger-garlic paste and ground spices (chili, fennel, dried ginger, whole spices). Cook for 30 seconds.
- 3Reduce the heat to very low. Whisk in the yogurt a spoonful at a time, ensuring it doesn't curdle. Stir constantly until the yogurt is fully incorporated and oil separates.
- 4Return the lamb to the pot. Add the broth, bring to a simmer, then cover tightly. Cook on very low heat for 2-3 hours until the lamb is fall-off-the-bone tender.
- 5Adjust the seasoning and serve hot with rice or naan.
