Fragrant basmati rice is par-cooked and then layered with succulent pieces of halal chicken that have been marinated in yogurt, ginger, garlic, and a robust blend of biryani spices including cardamom, cloves, and cinnamon. Each layer is interspersed with crispy, golden-brown caramelized onions, fresh cilantro, and mint. The biryani is then 'dum' cooked (steamed) to allow all the flavors to meld together beautifully. - 1Marinate chicken with yogurt, biryani masala, ginger-garlic paste, salt, and half the herbs for at least 1 hour.
- 2Fry sliced onions in ghee/oil until golden brown and crispy. Set aside.
- 3Par-boil the soaked rice with whole spices until 70% cooked. Drain.
- 4In the heavy pot, layer half the rice, then all the marinated chicken, half the fried onions, and remaining herbs. Top with remaining rice.
- 5Drizzle saffron milk (if using) and remaining ghee. Cover with a tight lid and cook on low heat (dum) for 25-30 minutes. Gently fluff and serve garnished with remaining fried onions.
