- 1Pound the chicken cutlets thin. Set up a breading station: flour, beaten egg, and panko mixed with paprika, cayenne, salt, and pepper.
- 2Dredge each cutlet first in flour, then egg, and finally firmly press it into the seasoned panko until fully coated.
- 3Heat the oil in a large skillet over medium-high heat until shimmering. Carefully place the cutlets in the oil (do not crowd the pan).
- 4Fry for 3-4 minutes per side until golden brown, crispy, and the internal temperature is 74°C (165°F). Drain on a paper towel.
- 5Serve immediately with a fresh squeeze of lemon juice.
