    Form the ground beef into four equal, loose balls. Mix chili powder, cayenne, salt, and pepper into the balls.

    Mix mayonnaise and sriracha to create the spicy mayo. Toast the buns.

    Heat a griddle or cast iron skillet over high heat until very hot. Place the beef balls on the griddle.

    Immediately place a piece of parchment paper over each ball and use a heavy spatula to firmly 'smash' the patties into thin discs. Season the top side with salt.

    Cook for 90 seconds, scrape off and flip the patty. Place a slice of cheese on top of two of the patties. Stack the uncheesed patties onto the cheese-topped ones to create two double patties.
