- 1Form the ground beef into four equal, loose balls. Mix chili powder, cayenne, salt, and pepper into the balls.
- 2Mix mayonnaise and sriracha to create the spicy mayo. Toast the buns.
- 3Heat a griddle or cast iron skillet over high heat until very hot. Place the beef balls on the griddle.
- 4Immediately place a piece of parchment paper over each ball and use a heavy spatula to firmly 'smash' the patties into thin discs. Season the top side with salt.
- 5Cook for 90 seconds, scrape off and flip the patty. Place a slice of cheese on top of two of the patties. Stack the uncheesed patties onto the cheese-topped ones to create two double patties.
- 6Remove, assemble the burger on the toasted bun with spicy mayo and your favorite toppings (lettuce, tomato, pickles).
