Spiced Lamb & Apricot Stuffed Peppers
These Spiced Lamb & Apricot Stuffed Peppers are a stunning and flavorful main course that's perfect for a dinner party or a special family meal. Sweet bell peppers are hollowed out and packed with a savory-sweet filling of ground lamb, cooked rice, finely chopped dried apricots, toasted almonds, and a warm spice blend of cinnamon, allspice, and mint. As they bake, the peppers soften and the filling becomes incredibly aromatic and juicy. The combination of rich lamb, sweet fruit, and crunchy nuts creates a symphony of textures and tastes that is both comforting and sophisticated.
