- 3Stir in the rinsed lentils, canned tomatoes, vegetable broth, and thyme.
- 4Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.
- 5Use an immersion blender to puree the soup until smooth, or carefully blend in batches in a standard blender.
- 6Season with salt and pepper. Serve hot with a swirl of coconut cream or a dollop of yogurt.
