- 1Divide the ground beef into 4 equal balls. Toast the buns in the skillet until golden and set aside. Mix mayo, ketchup, and mustard for the special sauce.
- 2Heat a cast iron skillet or griddle over high heat until smoking hot. Season the beef balls heavily with salt and pepper.
- 3Place two balls in the skillet. Immediately smash each one down with a stiff spatula and heavy object until very thin. Cook for 90 seconds.
- 4Flip the patties, top each with a slice of cheese, and cook for another 30-60 seconds until the cheese is melted. Repeat for the remaining patties.
- 5Stack two patties on each bun, spread with the special sauce, and serve immediately.
