Reuben-Inspired Beef & Swiss Melts

(0 Ratings)

This delicious Reuben-inspired sandwich offers all the classic flavors without the need for cooking a whole corned beef brisket. It uses thinly sliced deli roast beef, layered with melt-in-the-mouth Swiss cheese, crisp sauerkraut, and a vibrant Russian dressing, then grilled to golden perfection on hearty rye bread. It's a perfect hearty lunch or dinner for a chilly March day.

Instructions

  1. 1
Prepare the Russian Dressing: In a small bowl, whisk together mayonnaise, ketchup, prepared horseradish, finely chopped onion, Worcestershire sauce, paprika, salt, and pepper until well combined. Set aside.
  2. 2
Assemble the Sandwiches: Spread a thin layer of Russian dressing on one side of each of the 8 rye bread slices. On 4 of the slices (dressing-side up), layer 2 slices of Swiss cheese, then a generous portion of roast beef, followed by about 1/3 cup of well-drained sauerkraut, and finally 2 more slices of Swiss cheese. Top with the remaining 4 slices of rye bread, dressing-side down.
  3. 3
Butter the Bread: Lightly butter the outside of each assembled sandwich on both sides.
  4. 4
Grill the Sandwiches: Heat a large skillet or griddle over medium heat. Place the sandwiches in the hot skillet, cooking for 4-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted and gooey. You may need to cook in batches.
  5. 5
Serve: Remove from heat, slice in half diagonally, and serve immediately with extra Russian dressing on the side if desired.

Frequently Asked Questions

Can I use a different type of beef?

Yes, thinly sliced pastrami (beef pastrami) or even leftover cooked brisket would work wonderfully.

How can I make the sauerkraut less watery?

It's crucial to drain and squeeze the sauerkraut very well. You can even press it between paper towels to remove excess moisture before adding it to the sandwich.

Can I prepare the dressing ahead of time?

Absolutely! The Russian dressing can be made up to 3 days in advance and stored in an airtight container in the refrigerator.
