    In a pot, combine the rinsed lentils, water or broth, and turmeric. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the lentils are completely soft and mushy. Mash them lightly with a spoon to a smooth consistency.

    Prepare the Tadka (tempering): In a small frying pan, heat the ghee or oil over medium heat. Add the cumin seeds and let them splutter.

    Add the grated ginger and a pinch of asafoetida (if available). Cook for 30 seconds.
