These Peppermint Hot Chocolate Cookies are basically winter in cookie form. The base is a soft, fudgy chocolate cookie that tastes like a brownie. While warm, we top each cookie with a marshmallow which melts slightly, and then sprinkle crunchy crushed peppermint candy canes on top. They are festive, chewy, and chocolaty.
