- 1Pat salmon fillets very dry. Season skin and flesh generously with salt and pepper.
- 2Heat oil in a skillet over medium-high heat. Place salmon skin-side down and press gently for 30 seconds. Cook for 4-5 minutes until skin is very crisp.
- 3Flip and cook for another 2-4 minutes until desired doneness. Remove from pan.
