- 1Preheat oven to 220°C (425°F).
- 2In a small bowl, whisk together harissa paste, honey, olive oil, and garlic.
- 3On a large baking sheet, toss the potato and carrot chunks with smoked paprika, salt, pepper, and a drizzle of oil. Arrange in a single layer.
- 4Pat the chicken drumsticks dry and season with salt and pepper. Place them among the vegetables on the baking sheet.
- 5Brush the harissa-honey glaze generously over the chicken drumsticks.
- 6Roast for 35-40 minutes, or until the chicken is cooked through (internal temp of 75°C/165°F) and the vegetables are tender. Brush with any remaining glaze halfway through. Garnish with fresh herbs before serving.
