No-Bake Coconut Date Bars

These bars are the perfect healthy snack or quick breakfast. They are naturally sweetened by dates and packed with energy from nuts and seeds. With a chewy texture and a hint of vanilla, they are incredibly delicious and come together in minutes in a food processor. They're also vegan and gluten-free.

    If your dates are not soft, soak them in warm water for 10 minutes, then drain well.

    Line a small square baking pan (approx. 20x20cm) with parchment paper.

    In a food processor, pulse the nuts and oats until they form a coarse crumb.

    Add the pitted dates, 1/4 cup coconut, chia seeds, vanilla, and salt. Process until the mixture sticks together when pressed between your fingers.

    Transfer the mixture to the prepared pan. Press down very firmly and evenly using the bottom of a glass or a spatula.

    Sprinkle the top with extra shredded coconut and press down again. Refrigerate for at least 1 hour to set before cutting into bars.
