These bars are the perfect healthy snack or quick breakfast. They are naturally sweetened by dates and packed with energy from nuts and seeds. With a chewy texture and a hint of vanilla, they are incredibly delicious and come together in minutes in a food processor. They're also vegan and gluten-free.

- 1If your dates are not soft, soak them in warm water for 10 minutes, then drain well.
- 2Line a small square baking pan (approx. 20x20cm) with parchment paper.
- 3In a food processor, pulse the nuts and oats until they form a coarse crumb.
- 4Add the pitted dates, 1/4 cup coconut, chia seeds, vanilla, and salt. Process until the mixture sticks together when pressed between your fingers.
- 5Transfer the mixture to the prepared pan. Press down very firmly and evenly using the bottom of a glass or a spatula.
- 6Sprinkle the top with extra shredded coconut and press down again. Refrigerate for at least 1 hour to set before cutting into bars.
