- 1In a large pot, heat oil over medium heat. Sauté onion and carrots until softened, about 8 minutes.
- 2Add garlic, tomato paste, and all spices. Cook for 1 minute until fragrant.
- 3Add rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are very soft.
- 4Use an immersion blender to partially puree the soup, leaving some texture. Alternatively, transfer half to a blender and puree, then return to pot.
- 5Stir in lemon juice. Season with salt and pepper. Serve hot with a swirl of yogurt and a sprinkle of fresh cilantro.
