    Add rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are very soft.

    Use an immersion blender to partially puree the soup, leaving some texture. Alternatively, transfer half to a blender and puree, then return to pot.
