- 1Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. In a large bowl, toss the halved Brussels sprouts with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on one side of the prepared baking sheet.
- 2Roast the Brussels sprouts for 15 minutes while you prepare the salmon and glaze. Meanwhile, in a small bowl, whisk together maple syrup, soy sauce, grated ginger, and minced garlic to create the glaze.
- 3Pat the salmon fillets dry with paper towels. Season lightly with salt and pepper. After the Brussels sprouts have roasted for 15 minutes, remove the baking sheet from the oven. Push the sprouts to one side and place the salmon fillets on the other side of the baking sheet.
- 4Brush about half of the maple glaze over the top of the salmon fillets. Return the baking sheet to the oven and continue to roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the Brussels sprouts are tender-crisp and caramelized.
- 5Once cooked, remove the baking sheet from the oven. Toss the roasted Brussels sprouts with the dried cranberries and the remaining maple glaze (you can warm the remaining glaze in the microwave for 15 seconds if it's too thick).
