    In a large bowl, combine the cubed sweet potatoes and apple wedges. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Toss to coat evenly.

    Spread the sweet potato and apple mixture in a single layer on one side of the prepared baking sheet. Roast for 15 minutes.
