    In a pot, heat the olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, for 30-40 minutes until they are deep dark brown and intensely caramelized. Remove about 2/3 of the onions and set aside for topping.

    To the remaining onions in the pot, stir in the cumin, rinsed lentils, and rice. Add the broth/water, salt, and pepper. Bring to a boil.

    Reduce heat to low, cover tightly, and simmer for 20 minutes, or until all the liquid is absorbed and the rice and lentils are tender. Let rest, covered, for 10 minutes.

    Fluff the pilaf gently with a fork. Serve hot, topped generously with the reserved crispy caramelized onions.
