    Cook the orzo pasta according to package directions in salted water until al dente. Drain well, rinse with cold water to stop cooking, and drain again. Transfer to a large mixing bowl.

    While the orzo cooks, pat the shrimp dry and season lightly with salt and pepper. Heat a grill pan or outdoor grill to medium-high heat. Grill the shrimp for 2-3 minutes per side, or until pink and opaque. Remove and let cool slightly, then chop into bite-sized pieces if desired.

    In a small bowl, whisk together the lemon juice, olive oil, minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper to create the dressing.
