Ouzi is a celebratory Middle Eastern dish where spiced rice is stuffed inside a whole lamb or wrapped in pastry. This simplified version uses lamb shoulder cooked with the rice, creating a spectacular one-pot meal that's perfect for special occasions and gatherings.

- 1Brown lamb in ghee on all sides. Remove and set aside.
- 2Sauté onions until golden. Add ouzi spices and cook 1 minute.
- 3Add rice and toast for 2 minutes. Return lamb to pot.
- 4Add water, bring to boil, then simmer covered for 1.5 hours.
- 5Toast nuts and raisins. Serve rice topped with lamb, nuts, raisins and parsley.
