- 4Remove from heat. Stir in cooked rice, chopped apricots, and pine nuts.
- 5Spoon the filling into the pepper halves. Pour tomato sauce around the peppers in the dish. Cover with foil and bake for 45 minutes. Uncover and bake for 10 more minutes until peppers are tender. Serve hot.
