- 2Add chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- 3Stir in the tomato paste, dried thyme, and dried rosemary. Cook for 1 minute, stirring constantly. Return the browned lamb to the pot.
- 4Pour in the beef broth and diced tomatoes. Add the rinsed pearl barley. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 45 minutes to 1 hour, or until the lamb is tender and barley is almost cooked.
- 5Add the diced potatoes to the pot. Continue to simmer, covered, for another 20-25 minutes, or until the potatoes are tender. Season with additional salt and pepper to taste.
- 6Ladle the hot soup into bowls. Garnish with fresh chopped parsley before serving.

Frequently Asked Questions
Can I use a different cut of lamb?
Yes, lamb neck or stewing lamb would also work well. Ensure it's cut into uniform cubes for even cooking. Boneless cuts are recommended for ease of eating.
Do I need to soak the barley?
For pearl barley, rinsing is usually sufficient. If using hull-less or hulled barley, soaking overnight can reduce cooking time, but it's not strictly necessary for this recipe.
Can I make this in a slow cooker?
Yes. Brown the lamb and sauté the vegetables on the stovetop first. Then combine all ingredients (except potatoes, add those in the last hour) in the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
