- 1Pat beef dry and season generously with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat and sear beef until browned on all sides. Remove and set aside.
- 2In the same pot, add onions, carrots, and celery. Cook until softened, about 5-7 minutes. Add garlic and tomato paste, cooking for 1 more minute.
- 3Return beef to the pot. Add lentils, beef broth, bay leaves, and thyme. Bring to a boil.
- 4Reduce heat to low, cover, and simmer for 1 to 1.5 hours, until beef and lentils are tender.
- 5Season with additional salt and pepper to taste. Remove bay leaves. Serve hot, garnished with fresh parsley.
