- 1Soak the rice noodles in hot water for 15 minutes, then drain. Whisk together the sauce ingredients: tamarind, fish sauce, sugar, and a splash of water.
- 2Heat oil in a wok over high heat. Add the sliced chicken and stir-fry until cooked through. Push chicken to one side.
- 3Pour the egg into the empty side of the wok and scramble until just set. Mix it with the chicken.
- 4Add the drained noodles to the wok, then pour the sauce over everything. Stir-fry vigorously for 3-5 minutes until the noodles are soft and coated in the sauce.
- 5Stir in the bean sprouts and half of the crushed peanuts. Cook for 1 minute.
- 6Serve immediately, garnished with the remaining peanuts, a fresh lime wedge, and fresh cilantro.
