- 1Season the lamb shanks generously with salt and pepper. Heat oil in a Dutch oven and sear the shanks on all sides until deeply browned. Remove and set aside.
- 2Add the diced onion, carrot, and celery to the pot and sauté until softened (about 8 minutes).
- 3Stir in the tomato paste and thyme. Cook for 1 minute.
- 4Return the lamb shanks to the pot. Pour in the crushed tomatoes and beef broth. Liquid should mostly cover the shanks.
- 5Bring to a simmer, then cover tightly and braise in a preheated 160°C (325°F) oven or on the stovetop for 3 hours, or until the meat is fall-off-the-bone tender. Serve with the sauce spooned over mashed potatoes.
