- 1In a bowl, mix ground lamb with chopped mint/cilantro, ginger-garlic paste, salt, pepper, and a pinch of chili powder. Form into small, tight meatballs (kofta). Refrigerate for 15 minutes.
- 2In a large pot, sauté the puréed onion until golden brown. Add ginger-garlic paste and cook for 1 minute.
- 3Stir in all the spice powders (coriander, cumin, turmeric, chili powder) and cook for 1 minute.
- 4Add the crushed tomatoes and 1 cup of water or broth. Bring to a simmer.
- 5Gently add the raw kofta to the simmering gravy. Cover and cook on low heat for 35-40 minutes, stirring gently once or twice, until the kofta are cooked through and the gravy is thick. Garnish with garam masala and cilantro.
