- 1Season the beef cubes with salt and pepper. Sear them in batches in a Dutch oven until browned on all sides. Remove and set aside.
- 2Add the chopped onions to the pot and sauté until softened (about 8 minutes).
- 3Remove the pot from the heat and stir in the paprika and caraway seeds (this prevents the paprika from burning and turning bitter). Cook for 30 seconds.
- 4Return the beef to the pot. Stir in the diced tomatoes and beef broth. Bring to a simmer.
- 5Cover tightly and cook on the lowest heat setting for 2-2.5 hours, or until the beef is fork-tender. Check and stir occasionally. Serve hot with a dollop of sour cream.
