- 1In a pot, heat oil or ghee. Add the whole spices (cardamom, cinnamon, cloves) and sauté for 1 minute until fragrant.
- 2Add the sliced onion and cook until golden brown. Stir in the ginger-garlic paste and cook for 1 minute.
- 3Add the cubed chicken and cook until it is browned on all sides. Stir in Pulao spices (cumin, coriander, turmeric).
- 4Drain the soaked Basmati rice and add it to the pot. Stir gently for 1 minute.
- 5Pour in the chicken broth or water. Add salt. Bring to a rapid boil, then immediately reduce heat to the lowest setting, cover tightly, and cook for 15-20 minutes until all liquid is absorbed and the rice is fluffy. Do not lift the lid during this time.
- 6Let it stand, covered, for 5 minutes. Gently fluff the rice with a fork before serving with Raita.
