- 1Marinate the chicken in yogurt, biryani masala, ginger-garlic paste, salt, and pepper for at least 30 minutes.
- 2Partially cook the rinsed basmati rice (about 70%) in boiling water with whole spices (cardamom, cinnamon sticks). Drain immediately.
- 3In the heavy-bottomed pot, spread half of the marinated chicken mixture on the bottom. Layer half of the rice on top.
- 4Layer the remaining chicken mixture, and then top with the remaining rice. Drizzle the saffron milk over the top layer. Garnish with fried onions and fresh herbs.
- 5Cover the pot tightly with foil and then the lid (to seal the steam). Cook on very low heat (dum) for 45-50 minutes. Gently mix before serving.
