- 1Remove steaks from fridge 30 minutes before cooking. Pat very dry and season liberally on all sides with salt and pepper.
- 2Heat cast iron skillet over high heat until very hot. Add oil and swirl to coat.
- 3Place steaks in skillet. Sear without moving for 3-4 minutes until a deep brown crust forms.
- 4Flip steaks. Add butter, garlic, and herbs to the skillet. As butter melts, tilt pan and continuously spoon the foaming butter over the steaks for 2-3 minutes for medium-rare.
- 5Transfer steaks to a cutting board to rest for 5-10 minutes. Pour the skillet butter over the steaks before slicing against the grain.
