- 1Preheat oven to 375°F (190°C). Place pepper halves, cut-side up, in a baking dish.
- 2In a bowl, combine cooked rice, feta, parsley, dill, pine nuts, raisins, lemon zest, and lemon juice. Season with salt and pepper.
- 3Spoon the filling mixture evenly into the pepper halves.
- 4Pour vegetable broth into the bottom of the baking dish around the peppers.
- 5Cover with foil and bake for 35-40 minutes until peppers are tender. Remove foil and bake for 5 more minutes. Serve warm.
