- 1Drain and rinse the soaked chickpeas. Pat them very dry with towels.
- 2In a food processor, pulse chickpeas, onion, parsley, cilantro, garlic, cumin, salt, and pepper until it forms a coarse meal that holds together when pressed.
- 3Transfer to a bowl, stir in baking soda, and refrigerate for 30 minutes.
- 4Form the mixture into small, walnut-sized balls, pressing firmly. If frying, heat oil to 350°F (175°C) and fry in batches until deep golden brown. For baking, bake on an oiled sheet at 375°F (190°C) for 25-30 minutes, flipping halfway.
- 5Arrange warm falafel on a large platter with all the suggested dips, salads, and pita bread. Serve immediately.
