- 1Drain soaked chickpeas. Pat them very dry with a towel.
- 2In a food processor, pulse chickpeas, onion, garlic, herbs, and spices until finely ground but not pureed. Pulse in baking powder and salt.
- 3Refrigerate mixture for 30 minutes. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- 4Form mixture into 12-16 small patties. Brush with olive oil. Bake for 20-25 minutes, flipping halfway, until golden and crisp.
