- 1Preheat oven to 425°F (220°C). Toss cauliflower florets and unpeeled garlic cloves with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
- 2In a large pot, heat remaining 1 tbsp oil over medium heat. Sauté chopped onion until soft and translucent.
- 3Squeeze the roasted garlic from its skins into the pot. Add the roasted cauliflower and vegetable broth. Bring to a simmer and cook for 10 minutes.
- 4Use an immersion blender to purée the soup until completely smooth. Alternatively, carefully transfer to a blender in batches.
