Creamy Mushroom Risotto is a labor of love that rewards you with incredible texture and flavor. We use Arborio rice, which releases starch as it's slowly stirred with warm broth, creating a natural creaminess without heavy cream. Flavor comes from sautéed mushrooms (cremini or porcini), onions, garlic, and plenty of parmesan cheese. Finished with a knob of butter, this vegetarian dish is sophisticated and hearty. It’s the perfect main course or elegant side dish.

- 1Sauté mushrooms in butter until browned; remove.
- 2Sauté onion in oil. Add rice and toast for 2 mins.
- 3Add warm broth one ladle at a time, stirring constantly until absorbed.
- 4Continue for 20-25 mins until rice is tender.
- 5Stir in mushrooms, cheese, and remaining butter.
