This is not your ordinary rice pudding. Fragrant basmati rice is slowly simmered in milk with whole cardamom pods and precious saffron threads, resulting in a creamy, golden-hued dessert that is both comforting and elegant. It's a traditional treat often enjoyed across the Middle East and South Asia.

- 1In a heavy-bottomed saucepan, combine the rinsed rice, 4 cups of milk, sugar, and crushed cardamom pods.
- 2Bring to a simmer over medium heat, then reduce to low. Cook for 45-50 minutes, stirring frequently to prevent sticking, until the rice is very soft and the pudding has thickened.
- 3Meanwhile, steep the saffron threads in the 2 tbsp of warm milk.
- 4In the last 10 minutes of cooking, stir in the saffron-infused milk (and the rose water, if using).
- 5Remove the cardamom pods if desired. Serve warm or chilled, garnished with slivered pistachios.
