These Slow-Braised Beef Short Ribs are the definition of winter comfort food.     Season ribs generously with salt and pepper. Sear in oil in a Dutch oven until browned on all sides.

    Remove ribs. Sauté onion and carrots in the same pot until softened.

    Deglaze with balsamic vinegar and pomegranate juice, scraping up browned bits.

    Return ribs to the pot and add beef broth and herbs. Liquid should cover ribs halfway.

    Cover and braise in the oven at 160°C (325°F) for 3 hours until fork-tender.
