    Preheat grill for indirect medium heat (around 375°F/190°C) or oven to the same temperature.

    Pat chicken very dry. Mix all dry spices with brown sugar and 1 tbsp salt. Rub the chicken all over with oil, then coat generously with the spice rub, including inside the cavity.

    Pour out half the beer (drink or discard). Using a can stand or the can itself, place the chicken upright onto the can so it goes into the cavity.

    Place the chicken (on the can) on the grill over indirect heat or on a pan in the oven. Roast for 1 hour 15 minutes to 1.5 hours, until internal temperature in the thigh reaches 165°F (74°C).

    Carefully remove chicken from the grill/oven (using tongs and a thick mitt). Let rest for 15 minutes before carefully lifting it off the can and carving.
