There is no better winter warmer than Classic Beef Stew. We coat chunks of beef chuck in seasoned flour and sear them, then braise them slowly in a rich beef broth flavored with tomato paste, thyme, and rosemary. Large chunks of carrots, potatoes, and onions are added halfway through so they stay tender but not mushy. The gravy thickens naturally, creating a glossy, savory coating for the meat and veg. Serve with crusty bread to mop up the bowl.

- 1Toss beef in flour, salt, and pepper. Sear in pot; remove.
- 2Sauté onion. Add tomato paste and cook 1 min.
- 3Add beef back, pour in broth and herbs. Simmer covered 1.5 hours.
- 4Add potatoes and carrots. Simmer 30 more mins until tender.
- 5Adjust seasoning and serve.
