- 2Preheat smoker to 110°C using oak or hickory wood.
- 3Smoke brisket fat-side up until internal temperature reaches 70°C (about 6 hours).
- 4Wrap in butcher paper and continue smoking until internal temperature reaches 95°C.
- 5Rest wrapped in towel in cooler for 2 hours before slicing against the grain.
- 6Slice and serve with barbecue sauce on the side.
