- 1Toss potato cubes with 2 tbsp olive oil, salt and pepper.
- 2Roast at 220°C for 25 minutes until crispy and golden.
- 3Heat remaining oil in skillet. Sauté garlic and chili for 1 minute.
- 4Add roasted potatoes to skillet with cilantro and lemon juice.
- 5Toss everything together and serve immediately.
