    To make slicing easier, place the ribeye steak in the freezer for about 30-45 minutes. Then, slice it very thinly against the grain. Cut these slices into smaller, bite-sized pieces if desired. Season the steak lightly with salt and pepper.

    Heat 1 tablespoon of vegetable oil in a large skillet or griddle over medium-high heat. Add the thinly sliced onions and cook, stirring occasionally, until softened and caramelized, about 8-10 minutes. Remove onions from the skillet and set aside.

    Add the remaining 1 tablespoon of oil to the hot skillet. Increase heat to high. Add the thinly sliced steak in a single layer and cook quickly for 1-2 minutes, flipping once, until browned but still tender. Do not overcrowd the pan; cook in batches if necessary.
